1 cup chopped tomato
1⁄4 cup minced red peppers
1⁄4 cup minced red, spanish or green onion
1 clove garlic, chopped (optional)
1⁄2 cup chopped cilantro
A few parsley leaves finely chopped
2 tablespoon freshly squeezed lime juice
Sea salt and pepper to taste
1. Combine all ingredients together in medium sized bowl.
2. Refrigerate for 1 to 2 hours before serving.
